Mini Chocolate Chip Cookies??

So about a month ago, we went to visit Joy and Jason in Leo.  After done touring Gateway Woods, Nicole Weigand was so kind to share some wonderful cookies with us.  They were the normal mini sized cookies and were so yummy.  I asked her for her recipe and she informed me that this was what she followed PLUS added 2 T. of flax seed.  Yeah, now they were even healthier.  So today Elijah and I set out to make what we invisioned some mini chocolate chip cookies.

As we were making them we thought it interesting how small of an amount of dough sat in our bowl??  And it says it makes 48 mini cookies??  How was that ever going to happen with this tiny amount of dough??

When we got down to the final instructions of putting the dough on the cookie sheet we realized exactly why they could get 48 mini cookies out of it........

.....it called for 1/2 TEASPOON of dough per cookie.....huh???  1/2 TEASPOON???  Was I reading that correctly?  Never heard of such a thing.  I then noticed that this was a Weight Watchers recipe as well.  Which then made this all alot more funny.  Elijah and I were rolling in laughter as we kept throwing out funny comments over these tiny little morsels!!
"Don't choke on these!" "Don't eat it all in one bite!" " Be careful, you might only get one chip in each cookie", "OR maybe each cookie will just consist of one chip and no dough". "there are many mini chocolate chip cookies on this tray(48 in be exact).  Anyways, it got to be so funny I was almost in tears laughing so hard.

Yes, we actually used a 1/2 teaspoon to measure out the cookies.  It took a LONG time, when really we could have used a normal mini scoop cookie scoop and been done in 3 cookies:).

Now tell me weight watcher fans out there......how in the world do you eat just ONE of these coookies??  One cookie = one point!!  Guess I just ate myself 4 points in cookies.

Yep, I even had to get out the quarter to show the size of them.  I think the recipe should say Barely There Chocolate Chip Cookies.

PS....they were so good.  Soft and yummy!  Next time I plan to triple the recipe and actually make mini chocolate chip cookies!  (They were NO WHERE near as good as Nicole Weigands though).  Gotta ask her what else she did to hers.

Funny! Reminds me of the cookies you get in those little 100 calorie packs. Kudos to you for seeing it through :)

I was laughing the whole time while reading your post. Don't eat them all in one setting. HA HA

I'm gonna pee my pants! That's too funny! I like the quote "you might only get one chip per cookie." I don't think that Nicole makes them that small. They are small but not quater size. I do remember her saying that they were weight watchers. And she does make some awesome cookies! I'm guessing those cookies didn't last long in your house?

Jason said that flax seed is good in oatmeal, if you ever want to try it.

no not at all...nicole's cookies were just the normal mini cookies and so I never thought twice about them being ANY SMALLER....never knew they could be so small???
Will try flax in oatmeal. I bought a box of it and am excited to put it into other foods as well.

YOU WILL NEVER BELIEVE this.....BUT we have not eaten them all and that is BECAUSE I stopped the kids before they gobbled the entire batch:). I caught liam in the kitchen sneaking several today....they are just so easy to pop in your mouth and forget you even ate one. Definitely NOT A WEIGHT WATCHERS FOOD!!!!

This was definitely funny! But they were delicious:-) And you're so right - not a Weight Watchers food!!!

So funny!! They surely can't bake very long at all when there is so little dough there?? That's a great memory:)

Too funny! I give you credit for going ahead and doing it. I'm pretty sure I'd have done the 3 cookies but this was so much better!

Yes, flax seed is good on cereal, but to get the maximum benefit, you need to grind it fresh.

julie....you bake it for 4 minutes:) Yep, not long, but longer than I actually thought you would.

oh my, that is so funny! I think I would eat about 20 of those!!! :)

I also can't imagine that they are better than the chocolate chip cookie recipe you gave me years ago...maybe these are healthier though, since they have flax in them. :)

mindy.....you are right....that other choc chip cookie recipe is the greatest. IN FACT, we resorted BACK to that TODAY!! We made "real" cookies today:)

LOL! Sandra this is Nicole ..... yeah.... I should've been more specific :) I definitely made them bigger and I'm sure I added more chocolate chips than it called for. Not sure what else ... I haven't made them since then. And for sure I didn't only eat one :) Weightwatchers recipe ... what a joke! Who stops at one quarter sized cookie?

Sounds like fun with Elijah though! Hope to see you again soon, and thanks for the laugh!:)
