Canning Tomatoes

So my mom has always canned tomato juice as long as I can remember. Well, this week she is on vacation and told me to use her tomatoes, plus my tomatoes and can some juice if I wanted. So that is exactly what I did yesterday. For the first time I canned (by myself) tomato juice!!!!! Here they are all cut up and simmering away on the stove top. The larger pot I did twice.
The jars in the oven on the lowest setting getting warm for canning. Such an easy way to do it.Juice is ready to hit the stove again and bring to a boil. Got the spices in and it tasted wonderful!!
The finished result: 14 jars of my very own tomato juice. I started the whole process of picking my mom's tomatoes at 10:30 and by 3:30 I was finished!! They were all sealed too by the time it was dinner:). SUCCESS!!!

I remembered what I was suppose to do. I did call mom though to ask what spices went in it and how long to cook the tomatoes, but other than that....

Way to go Sandra!! Keeping the jars warm in the oven is an awesome idea...never heard of that. Oh yeah, I meant to ask you in the last blog...where did you guys go camping??

So do you not have to use an actual canner?

bri...nope...no canner needed. You heat the jars in oven on lowest setting. Keeping them there until use. Boil your juice, pour into hot jars, have lids in hot water. Wipe of rim of jar, place on lid and screw on the outer ring. Seals up tight in 30 minutes or more. SIMPLE really!!

I sure think so. I did this with banana peppers too. I pickled them and canned them. Worked great.
What are you wanting to can? :)

nothing at the moment. :) Troy's mom and I can grape juice every sept. (the only canning I've done so far), and it's super easy, but we use a canner and do it at her house b/c I have a flat top stove, like I saw you do in your pic. And you can't use a canner on a flat top I don't think. So I was wondering if you can always do canning like you did.

That is so great! It is a good feeling of accomplishment, isn't it?! I have done quite a bit of canning this year too! I did diced tomatoes, two kinds of spaghetti sauce, tomato juice, salsa, peaches and applesauce. I actually was just reorganizing all my jars this morning because I love looking at all my hard work stacked in nice rows. :)

Wow great job! I am so impressed with all of you canners out there. Looks like hard work but rewarding in the end. If I had more room to store a bunch of glass jars and supplies I would give it a try - someday maybe.
